Ingredients

  • 1 cup quinoa, dried
  • 1½ cups prepared chicken stock
  • 1 oz. oil-packed piquillo peppers, seeded and sliced
  • 3 tablespoons shallots
  • 2 teaspoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 oz. roasted vegetables
  • 6 oz. grilled sous vide salmon
  • Salt to taste

Recipe Instructions

  1. In a medium pot, add the quinoa, shallots and chicken stock. Season with salt if desired.
  2. Cook until the quinoa is tender and cover to steam for about 15 minutes. Reserve warm or chilled.
  3. Season the quinoa with lemon juice and olive oil.
  4. Top with roasted vegetables and the grilled sous vide salmon.
