Ingredients
- 1 cup quinoa, dried
- 1½ cups prepared chicken stock
- 1 oz. oil-packed piquillo peppers, seeded and sliced
- 3 tablespoons shallots
- 2 teaspoons lemon juice
- 1 tablespoon extra virgin olive oil
- 2 oz. roasted vegetables
- 6 oz. grilled sous vide salmon
- Salt to taste
Recipe Instructions
- In a medium pot, add the quinoa, shallots and chicken stock. Season with salt if desired.
- Cook until the quinoa is tender and cover to steam for about 15 minutes. Reserve warm or chilled.
- Season the quinoa with lemon juice and olive oil.
- Top with roasted vegetables and the grilled sous vide salmon.
